Nice for cold weather this fennel, carrot and orange soup recipe is also good for people looking for healthy food and low carbs recipes.
Ingredients:
2 fennel bulbs
1000 g carrots
1 teaspoon ginger grated
1 onion
2 oranges
1 vegetable cube
1500 to 2000 ml water
Salt and pepper
Preparation
Peel and thinly slice the carrots. Cut the fennel into small pieces. Chop the onion.
Extract the juice of the 2 oranges and get the zest of 1 orange.
In a saucepan heat some olive oil. Add the chopped onion and the grated ginger. Saute for 5 minutes.
Add the vegetables and sauté for 5 minutes.
Cover with the water. Add the vegetable cube, orange zest and orange juice.
Simmer for 30 minutes. Remove from the heat. Pour half of the cooking water in a bowl.
Using a hand mixer, blend the vegetables with the remaining water.
Mix in the cream.
Gradually mix in the reserved water until you get the right texture.
Add salt and pepper and serve warm.
